COLUMBUS, Ohio — October is National Pasta Month and Oct. 17 recognizes "National Pasta Day."
In honor of that, 10TV's Dom Tiberi is sharing the recipe for his "world famous" meatballs and spaghetti sauce.
Here's how to make the dish:
Ingredients
- 1 pound ground round
- 1 pound ground pork
- 1 pound ground veal
- 4 eggs
- 1 cup bread crumbs
- Salt to taste
- Pepper taste
- 4 cloves garlic, minced
- ¼ cup parsley
- ½ cup parmesan cheese
Cooking Instructions
- Combine all ingredients and mix well.
- Add more bread crumbs if mixture is too wet.
- Pre-heat oven to 350 degrees.
- Grease a cookie sheet with olive oil
- Roll meat to golf ball size balls
- Place on cookie sheet and bake for 15 minutes. Turn them over and bake for about 5 more minutes
- Add them to sauce of choice and let them cook rest of the way
Sauce recipe
- Use a high quality tomato puree and paste of your choice.
- Coat a pan with extra virgin olive oil and add chopped garlic. I like 4 to 5 cloves. You can use more or less.
- I like to add a fatty piece of pork and sear it in the olive oil and garlic. Leave it in the sauce and let it cook the rest of the way – it gives the sauce great flavor.
- Next, add the puree, tomato paste and water; enough water to break it down and make it double in size.
- Next add oregano, parsley, basil, salt and pepper -- use fresh if available. Again add to taste. If you like oregano add more, same with parsley. I also like to add fresh parmigiano cheese.
- When the sausage and meatballs have been seared add them to sauce and then let it simmer. I start mine at night and stir and stir and stir and then before bed, put it in the oven on low and let it cook overnight.
- Don't be afraid to try different things. I do it all to taste.
